1. I am thankful I work at a place where I can get an ultrasound anytime I want.
2. I am thankful I was able to see my precious baby.
3. I am thankful for its beating heart.
4. I am thankful there is only 1!

Thursday, April 16, 2009 Easter Post

Wow, almost a week late on this one....but I am determined to do a post about Easter! We had a great Easter, busy, but great. On Saturday night, we went to eat at Jason's parents house in Brownsville. We had so much fun. Jackson is definitely getting a personality and boy did he make himself known at their house.
Sunday morning, we woke up early to do the traditional Easter morning things...Easter bunny, breakfast and get ready for church.
Jackson loved his Easter basket!
Checking out his eggs

After he got into his Easter basket (and eating some jellybeans), we fed him a healthy breakfast of powered doughnuts! Yes, we are great parents!
Enjoying his doughnut!
After we got him all hopped up on sugar, we got him ready for church and dropped him off in the nursery. I'm sure they loved us for that. =)

Traditional Easter morning picture

After church, we went with every other family in Memphis to Memorial Park to take pictures.

Then we went to my parents house to eat the "traditional" Easter lunch. Ham, know what I'm talking about. Jackson got another Easter basket from my parents (he is not spoiled at all, right?)

Although we had a very busy weekend, we can't forget the purpose of Easter. It's not about a bunny, what you wear, or how many eggs you find. It's a day to rejoice that our Savior is alive! What a wonderful day!

Your attitude should be the same as that of Christ Jesus: Who, being in very nature God, did not consider equality with God something to be grasped, but made himself nothing, taking the very nature of a servant, being made in human likeness. And being found in appearance as a man, he humbled himself and became obedient to death— even death on a cross! Therefore God exalted him to the highest place and gave him the name that is above every name, that at the name of Jesus every knee should bow, in heaven and on earth and under the earth, and every tongue confess that Jesus Christ is Lord, to the glory of God the Father. Phil 2:5-11

Banana Chocolate Chip Muffins

Since some of my "blog" friends are posting recipes and such, I thought I would post one of my recent favorite things to make on a Saturday morning. Jackson LOVES bananas, but I was trying to figure out what to do with the one or two extra bananas we had left at the end of the week. I decided to start freezing them and make these muffins when we had enough. Ingredients:
1 1/2 cups flour
1 cup sugar
1 tsp. baking soda
1 Tbs. salt
1 egg
1/2 cup Miracle Whip (I subbed this for sour cream once and it was equally delicious)
3 ripe bananas (the riper, the better!!!)
1 cup chocolate chips

1. In a large bowl, combine flour, sugar, baking soda, and salt
2. In a medium bowl, beat egg. Ann banana and mash thoroughly using a potato masher or a fork. Stir in Miracle Whip. Add to dry ingredients and stir until moistened.
3. Fill paper-lined muffin tins 3/4 full; sprinkle tops with chocolate chips. Bake at 375 degrees for 20-25 minutes or until a toothpick comes out clean. Allow muffins to cool 5 minutes in the pan, and then remove to wire racks to finish cooling (good luck waiting that long...usually by this time we are chowing down on them). Store loosely in a covered container to help prevent stickyness (if there are any left)

Last weekend, was so much fun! Besides the GORGEOUS weather, we took Jackson to his first Easter egg hunt. We had been practicing the week leading up to the hunt: we would put "practice" eggs down and Jackson would hurry and put them in his basket. He had it down pat!

*Daddy helping Jackson make his cookie
*Jackson NOT enjoying getting his face painted
*No, he is not taking eggs out of that little boys basket...he is giving them to him.
*"I LOVE hunting eggs!"

*So tired from all that hunting.

When I was pregnant with Jackson, I never had any of the symptoms of pregnancy that most people do. Well, this time around all that has changed. I have been craving broccoli something fierce! Now, this is strange because I HATE broccoli in my "regular" life. For a week I was eating plain broccoli, broccoli cheese soup...if I could get my hands on it, I would eat it. So the other day in my Food & Family magazine, they had a recipe for chicken and broccoli casserole (pictured above) so of course I made it. 2 bites in, I was done with broccoli FOREVER!!!! I mean, just looking at the picture above makes me want to vomit! I pushed my plate aside and I was done with dinner. Jason was so sweet and put the left-overs in the fridge. The next morning, I opened the fridge to make my lunch and was met with the stench of left-over broccoli. UGH! I quickly grabbed a fizzy caffeine-free coke and a sleeve of Saltines and decided I would just buy my lunch. Since that fateful day, my stomach has been churning: morning, noon and night.

I think I can officially say I have morning sickness. Oh the joys of pregnancy.

April 1st Verse

Your love, O LORD, reaches to the heavens, your faithfulness to the skies. Your righteousness is like the mighty mountains, your justice like the great deep. O LORD, you preserve both man and beast. How priceless is your unfailing love! Both high and low among men find refuge in the shadow of your wings. Psalm 36:5-7

I found this verse in a different translation (The Message) and I fell in love with it, so I included it as well:

"God’s love is meteoric, His loyalty astronomic, His purpose titanic, His verdicts oceanic. Yet in His largeness nothing gets lost; Not a man, not a mouse, slips through the cracks. How exquisite Your love, O God!"
